40 Steak + Seafood Restaurant (Formerly Caspar’s East 40 Food & Drink)

40 Steak + Seafood (formerly Caspar’s East 40; East 40 Chophouse & Tavern) is an upscale bar and restaurant that features a decor consistent of that around the 1920s-1940s with a large collection of antiques.

Ed and Joan Conlin, of the long-time regional retailer Conlin’s Furniture, established East 40 in May 1975.  In 1979, Caspar and Matina Borggreve purchased the restaurant, and continued to add antiques to the decor. East 40 underwent an ownership change in 2003, at which time it became known as “East 40 Chophouse & Tavern.”

Dale Zimmerman, who also owns downtown’s Peacock Alley, purchased East 40 in 2014. The restaurant soon after underwent major renovation and began operating as “40 Steak + Seafood.”
